Atomic Buffalo Turds (ABT's)
INGREDIENTS
  - Jalapeño peppers: 1 lb
- cream cheese: 8 oz
- sharp cheddar cheese: 8 oz
- thin-sliced bacon: 1 lb
- dry rub: 3-4 TBSP
STEPS
1. Wash, cut off tops & core peppers.
2. Stuff peppers with cream & cheddar cheese.
3. Wrap bacon around each stuffed pepper.
4. Give the wrapped peppers a light dusting of your choice of dry rub.
5. Prepare smoker & preheat to 250-275F.
6. Add ABTs to the smoker for 2-3 hours or until the bacon is crispy.
IDEAS
- Cut the peppers in half to make pepper-boats that are easier to wrap with bacon.
- Baste with a sauce at the end of your cook to add a little extra sweetness or flavor.
- Add toothpicks or skewer sticks to make them easier to pick up.
