Kettle Fried Korean Style Wings

Korean Kettle Fried Wings Recipe

INGREDIENTS
   - chicken wings: 2 lbs
- corn starch: 1/2 cup
- white flour: 1/2 cup
- water: 1.5 cups
- ground pepper: 1 TBSP
- kosher salt: 1 TBSP
- garlic powder: 1 tsp
- paprika: 1 tsp
- Gochujang sauce: 2/3 cup
- soy sauce: 1/4 cup
- rice vinegar: 2 TBSP
- green onions: 1/4 cup chopped

STEPS
1. Set up grill for high temp grilling, use a Vortex® if applicable & preheat.
2. In a bowl, mix corn starch, flour, water, pepper, salt, garlic powder & paprika to make a batter.
3. Use tongs to place wings into the batter then remove, allowing any excess batter to drip off.
4. Place wings on the grill around the Vortex®.
5. Rotate lid 1/4 turn every 5 minutes.
6. Flip wings every 10 minutes until they reach an internal temperature of 165F.
7. Rest wings for 5 minutes.
8. Place wings back on grill & continue cooking until they reach an internal temp of 190F & remove from grill.
9. Whisk Gochujang, soy sauce & rice vinegar in a large stainless bowl to make a sauce.
10. Dump wings into the sauce & toss until fully coated, then garnish with green onions & serve.
